Sticky rice with mango

Mango sticky rice recipe

The glutinous rice must be soaked in abundant water for at least 12 hours. Once soaked, it should be drained and washed a couple of times to remove some of the excess starch. Drain and place in a large bowl. Cover again with water, just enough to cover the rice, cover with a shallow dish and cook in the microwave at maximum power for 10 minutes. This is the quick way. If you want, it can be cooked in the traditional way, steamed over a pot with water, on a strainer with a muslin or fine napkin, leaving it to cook for 50 minutes.

Glutinous rice

Glutinous rice must be soaked in abundant water for at least 12 hours. Once soaked, it should be drained and washed a couple of times, to remove some of the excess starch. Drain and place in a large bowl. Cover again with water, just enough to cover the rice, cover with a shallow dish and cook in the microwave at maximum power for 10 minutes. This is the quick way. If you want, it can be cooked in the traditional way, steamed over a pot with water, on a strainer with a muslin or fine napkin, leaving it to cook for 50 minutes.

How to make sticky rice with plain rice

Now it will look like a brothy rice or rice soup. Cover it very well (for example with a cloth and a lid) and let it stand for 45 minutes. After about 20 minutes uncover it and stir it again, it may remain liquid at the bottom and we need all the rice to be covered equally. Cover it again.
Once dry put them in a frying pan over medium heat, moving them from time to time, until they are toasted. Keep an eye on them so they don’t burn, sautéing and stirring occasionally. It will take about 7-8 minutes. They should be crispy, so when they start to brown you can taste them. Take them out and let them cool.
2- It is easier to cook with it. The packages are a minimum of 1 kg, so I have taken into account that if you buy a special rice you can do more things with it. This rice is cooked in the same way as Japanese rice, but it is only necessary to wash it once. The most glutinous rice (the white one) is almost like mochi rice and it is easy to make a sticky mess if you are not used to cook with this kind of rice.

Thai sticky rice

The slightly different aspect of their version is the addition of shaved ice and the more soupy consistency of the milk/coconut milk mixture. You can even ask for an extra scoop of vanilla ice cream to put on top! This is a fabulously refreshing dessert during the summer.
In a separate bowl, combine the remaining 2/3 cup coconut milk with 2/3 cup regular milk and ½ cup sweetened condensed milk. Taste and add more sweetened condensed milk if sweeter is desired.
Divide the crushed ice into 4 bowls. Top each bowl with half of a sliced mango and 1-2 tablespoons of black sticky rice. Divide the milk mixture between each bowl, pouring it over the mango, ice and glutinous rice. Add a scoop of vanilla ice cream to each bowl if desired. serve!
